Nutrim Blueberry Lemon Muffins


Flour 1cup
Nutrim 1/2cup
Sugar 3/4cup
Salt 1/2tsp
Baking Soda 2tsp
Oil 1/3cup
Egg 2
lemon juice 2tsp
lemon zest 2tsp
Milk 1/3cup + 1Tbsp
Blueberries 1cup
Crumb Topping
Sugar 1/2cup
Flour 1/3cup
Butter 1/4cup


  1. Combine flour, Nutrim, sugar, salt and baking powder. Make well in center.
  2. In separate bowl, mix oil, eggs, lemon juice, lemon zest, and milk.
  3. Pour wet mixture into dry ingredients and stir until just mixed. Fold in blueberries.
  4. Cut crumb top ingredients together and sprinkle over the top of the muffins.
  5. Bake at 350º F for 18-20 minutes or 10 minutes on mini muffins. Yield: 12 muffins or 48 mini muffins.
